Mushroom Rice

A good replacement for the usual plain rice, this goes well with your side dishes for dinner.

Ingredients

  • Olive Oil
  • 2 - 3 tablespoons of Miso
  • 2 Portobello Mushrooms
  • Chopped Garlic / 2 - 3 coves of Garlic
  • Rice (or Quinoa)
  • Salt and Pepper

Cooking Instructions

  • Slice mushrooms – we want them to be larger than usual as they will shrink later on.
  • Gently boil mushroom for 5 minutes or until they are almost cooked.
  • Keep mushroom water to help deglaze pot later.
  • Heat oil and sauté garlic till fragrant. (Use chopped garlic to save time)
  • Add boiled mushroom. Season with salt and pepper.
  • Deglaze pot with mushroom water.
  • Add rice and mix.
  • Add miso and mix.
  • Add mushroom water to deglaze when needed. Rice should be soft and moist from the mushroom water.

ABC Soup

Traditional ABC soups use pork or other meats to flavour the soup. In this variation, tomatoes are used - keeping the recipe vegetarian-friendly while still being flavourful.

Ingredients

  • 3 Tomatoes
  • 2 slices of Ginger
  • 1 Potato
  • 1 Carrot
  • 1 head of Corn
  • 1/4 Onion
  • Cooking Oil for frying
  • 1.5 - 2 litres of Water
  • 2 - 3 Shiitake Mushrooms
  • 1 - 2 tablespoon of Light Soy Sauce
  • Salt to taste
  • White Pepper Corn to taste
  • 1 - 2 tablespoon of Sesame Oil

Cooking Instructions

  • Peel and chop tomato, ginger, potato, carrot, onion, mushroom and corn.
  • Heat oil in a pot, add ginger and tomatoes. Fry over slow fire for 3-5 mins until tomatoes become soft (like puree).
  • Once done, add water. (or stock of your choice for more flavour). Boil and simmer for 10 minutes on medium fire.
  • Once it has boiled, add white pepper, potato, carrot and onion. Cook for 10 minutes until soft.
  • Add mushrooms when done, and cook for another 2-3 minutes. Add salt and light soy sauce.
  • Once all vegetables are cooked, turn off heat and drizzle sesame oil.

Vegetarian Cheesy Stuffed Pototo

A more exciting take on potatoes. To parents: this could be a good and easy way to sneak in vegetables as they will be mixed in with mashed potato and cheese!

Ingredients

  • 3 Potatoes
  • Olive Oil
  • Salt and Pepper to taste
  • 2 cloves of Garlic
  • 1/4 of a Broccoli
  • 1/4 of a Carrot
  • 2 Shiitake Mushrooms
  • 3 - 4 tablespoons of Cream Cheese
  • Craft/Cheddar Cheese (to your preference)

Cooking Instructions

  • Create holes in the potatoes using a fork.
  • Coat potatoes in olive oil and salt.
  • Bake in oven at 180°C for 45 minutes to 1 hour. To check if they are cook, poke them with a fork. Potato should feel soft.
  • In the meantime, chop up broccoli, carrots, garlic and mushroom.
  • Heat up oil in a pan and sauté garlic till fragrant.
  • Add in chopped vegetables and cook for 2 minutes. Season with salt and pepper. Set this aside when done.
  • Once the potatoes are cooked, cut and pinch them open.
  • Scoop out baked potato and place into a separate bowl.
  • Season with salt and pepper, then mix with cream cheese, garlic, mushroom, broccoli, and carrots.
  • Stuff potato with the mixture.
  • Top with cheese and bake for 15-20 minutes at 180°C.

Grilled Eggs in Portobello

Ingredients

  • 2 Portobello Mushrooms
  • 1 - 2 stalks of Spinach
  • 2 Eggs at room temperature
  • Olive Oil
  • Black Pepper
  • Salt
  • Mozzarella Cheese for toppings (Optional)

Cooking Instructions

  • Preheat the grill to medium heat (about 180°C)
  • Wipe the mushroom caps with damp paper towel and remove stems.
  • Brush mushroom caps with olive oil.
  • Place mushrooms on the grill, cap side down.
  • Add chopped spinach followed by egg into each mushroom.
  • Sprinkle salt, pepper and top it off with mozzarella.
  • Grill till eggs are cooked and mushrooms are tender (12 to 15 minutes)
